Water is always a concern when farming in an arid climate, but farmers are able to grow decent crops with the help of irrigation in this region of the Southwest. Arizona ranks second in the U.S. in head lettuce, leaf lettuce, romaine lettuce, cauliflower and broccoli production, according to the University of Arizona.
